I think Fall has actually arrived in Austin! Sunday was a perfect day for Kevin and I to go to the Pecan Festival. I am not sure if I have told you about the festival before but it is held twice a year, the first weekend in May and the last weekend in September. Every time we attend a festival, I am amazed at the diversity of those who are there. Anyway, the Pecan Festival has over 275 artist plus commercial booths. There are a variety of food vendors, although you may find it a bit tough to find something to eat if you are a Gluten Free VegHead. They also have live music...we saw a man playing "Stairway to Heaven" on a pan flute. It was interesting.
On a sadder note...Kevin and I will not be taking a mini vacation this month. I am going to start working at the preschool while I am working on building my J.R. Watkins business. There is a really big sale going on for Kevin's job and he can't get away. We are hoping to get away for a long weekend sometime in November, but we may not be doing any traveling until mid December when we go back to Iowa for the holidays.
Monday, I started going to the gym, I really like the location because I make all right turns to get there and back home. I was quite disappointed how unfit I have really become. My friend did a lot of cardio and I couldn't keep up. After catching my breath, I decided to do a leg workout as well...I was frustrated at how little weight I could use.
I went back to the gym on Tuesday. After a little carido, I did a back and chest workout. I have to tell you, I was so frustrated about the mechanical workings of the machines, I wanted to give up my membership. I came to my senses and decided to make an appointment with the personal trainer just to show me how to work the machines.
Wednesday, I went into the gym for my appointment. The personal trainer wanted to go through diet and make a workout plan for me. I told him all I wanted was to know how to use the machines. He seemed a little bummed, so I told him if he wanted to go over a meal plan with me, I would do that...so I told I followed a gluten free, soy free, pretty close to being vegan diet. He got a strange look on his face and said "I can't help you". That made me giggle just a bit, I already knew he couldn't. He did say to make sure I get enough protein. After we went through the mechanical workings of the machines, I felt much more confident in using them.
I swear the personal trainer has it in for me or maybe it was my lack of core strength, but when I took his ABS class on Thursday, I thought I was going to pass out. It was very hard for me to admit when I had enough because a little voice in my head kept saying "I can take anything you dish out, buddy". Luckily my sanity prevailed and I only worked to my limit and didn't go overboard.
A friend and I also went to Senor Buddy's for dinner on Thursday. Although there wasn't a lot of items for Gluten Free VegHead, the restaurant was willing to go the extra step to meet my requests.
Friday, I was so sore...everything hurt. I did go over to my friends house and watch her put make up on my new friend. While they were busy, her son tried to explain Mine Craft to me...He was nice enough to put it on peaceful mode, so I didn't have to watch people getting their faces blown off. I still don't understand the game, but it was fun talking to the little man. We also went shopping at Thrift Town. I didn't find anything, but she found a killer black dress. One the way home from her house, I got lost again...well sort of lost...I turned right on West Gate instead of left because I thought I could get on William Cannon if I went down to the next intersection. It doesn't. It runs parallel to it...after all was said and done, it took me about an hour to get home, whereas it would normally take 20 minutes.
I was very very bad on Saturday, well Saturday evening when Kevin and I went to Baker's Street Pub. There was a band there we wanted to see. However, we had forgotten we went to another Baker's Street Pub in Westminster, CO and the only thing available that fit into my meal plan was a salad. So I made some really bad decisions...I ate tons of dairy and gluten...I even accidentally got a mouth full of bacon. You might be saying to yourself...how do you "accidentally" get a mouth full of bacon...well, it was hidden under the cheese on the potato skins. Kevin being the awesome man he is, removed all the bacon and green onions from the next one for me.
My amazing man had another amazing sale's week at his new job with a closing rate of about 80%. Kevin says he likes the selling part, but he isn't too trilled about the paperwork part. I can certainly relate to that.
Senor Buddy's...not a lot of menu choices, they seemed more than happy to meet my needs. I would go back again; especially for the red corn tortillas...they were amazing.

Muesli Scone from Elana's Party. I used goji berries instead of cranberries, but I didn't have them. If you use goji berries be sure to soak them for 30 mins in a hot water before adding them to the recipes. The recipes calls for one large egg, I substituted two flax seeds eggs and they came out fine.
Gluten Free/Dairy Free(vegan) Chocolate Chips Cookies I didn't have any grape seed oil, so I substituted with part coconut oil and part olive oil.
Gluten Free Vegan Hamburger Buns from The Complete Idiot's Guide to Gluten-Free Vegan Cooking I made these for myself, but Kevin likes them too.
Paleo Trail Mix from Multiply Delicious. I used goji berries in this as well because I didn't want to mess with cutting up dates.

I have been reading another cookbook this week. The Paleo Diet Revised: Lose Weight and Get Healthy by Eating the Foods You Were Designed to Eat, I know what you are thinking...why would a Gluten Free Veghead be reading a Paleo cookbook. Well one reason vegetables, nuts, and seeds are all in the Paleo meal plan. The other reason is Kevin eats meat, so I am always looking for new and healthy recipes to cook for him. Hey, maybe I should do a post on how a Gluten Free Veghead and a meat eater can have meal time harmony.
